Ingredients:

1 lb. large shrimp, peeled and deveined

2 zucchinis, sliced

2 yellow squash, sliced

½ bunch asparagus, cut into thirds

2 red bell pepper, cut into chunks

What you’ll need from store cupboard:

2 tbsps. olive oil

2 tbsps. Cajun Seasoning

Salt & pepper, to taste

Instructions:

1. Heat oven to 400 °F.

2. Combine shrimp and vegetables in a large bowl. Add oil and seasoning and toss to coat.

3. Spread evenly in a large baking sheet and bake 15-20 minutes, or until vegetables are tender. Serve.
