Keto version of the Tik Tok baked feta dish

Ingredients (serves 2)

Macros: per serving

12 grams of total carbs, about 5 grams of fiber so 7 grams net carbs? (Not sure here)

61 grams of fat

32 grams of protein

How to: Preheat the oven on 180 celsius or 360 fahrenheit. Put the block of feta in an oven dish with the halved cherry tomatoes and the sliced chorizo. Season with black pepper and sprinkle 1 tablespoon of EVOO on top. Put the dish in the oven for about 15 minutes, or until the feta is soft and the chorizo is nice and brown. Fry the cauli rice with the other tablespoon of EVOO for about five minutes, I like it when it still has some bite to it.

Toss the cauli rice with the other ingredients in the baking dish and enjoy!

—> If you want it lower in carbs, you could swap the cherry tomatoes for some green veg such as wilted spinach

—> If you want less fat, you could fry the sliced chorizo slowly in a skillet to render some of the fat, and use that to fry the cauli rice, instead of 1 tablespoon of EVOO
