Halloumi, Spinach and Egg Breakfast Bowl with Avo and Tahini Dressing

This recipe is loaded with healthy fats and protein and it makes enough for two servings!

Ingredients:

1 tbsp olive oil
2 eggs
2 cup baby spinach
1 avocado
7 oz halloumi
0.25 cup tahini
lemon
2 tbsp water

salt and pepper

Steps:

In a small sauce pan, cook the eggs for 5 minutes or until soft boiled. Transfer to a bowl of cold water, peel, halve and set aside.

Heat olive oil in a non-stick frying pan over medium heat. Add the spinach and cook, stirring, for about 3 minutes or until wilted. Remove and set aside.

Add the halloumi to the same pan and cook for 2 minutes on each side or until golden.

Make the dressing: in a small bowl add the tahini, water, juice from half a lemon, and season with salt and pepper. Whisk to combine. Combine the eggs, spinach, halloumi, sliced avocado, and eggs in a bowl.

Season with salt and black pepper. Top with tahini dressing and sprinkle with pepper. Serve.
