So, I tried a chicken tender coating, it’s better than pork rinds. Made some tenders and works for Schnitzels as well.

FYI: pretty carb heavy, about 10 carbs per meal. I do OMAD, so it’s fine for me.

Ok, I usually use only breast meat for my tenders and portion about 1.5 breasts per serving.

Just cut the breast into 3 pieces, if you cut them too small, you’ll have to use more coating, and that means more carbs. Pat them dry. Drip in whisked egg mix, shake off extra egg, dip in coating, cook how you prefer (deep fry, pan fry, air fry, oven) till nice and brown. Spice with choice for spices.

Egg mix: 4 eggs to 1 tablesppon lite soy sauce.

Coating: You need smoked paprika, pepper, salt and low carb tortillas. 1.5 tortillas per serving. Cut the tortillas into 1 inch squares. Put the tortillas in an air fryer or oven @200*c or close untill they snap when you bend them. You basically just want to dry them. Put all the chips into a food prosessor or blender until fine. Bigger pieces will remain, but they are cruchy and delecious. And fresh ground black pepper, paprika and salt, pinch of each. Thats the coating done.
