What are net carbs?

“Net carbohydrates” are the carbs in food that are fully digestible and absorbed by the body. This is different from “total carbohydrates” as that includes all the different types of carbohydrates found in a food such as dietary fiber, which passes through the digestive system without being completely broken down and absorbed by the body. Why are you using modified wheat starch? Why not just use regular wheat starch?

Modified wheat starch (also known as) resistant starch is classified as a dietary fiber. Dietary fibers are not fully broken down and digested which allows us to create bread with 1g net carb per serving. Regular wheat flour contains many net carbs that are broken down into simple sugars and absorbed by the body during digestion.
